These were introduced from Egypt and are widely made at Christmas

Dough:

1 cup of Sunflower oil

1/2 cup of sugar

1/2 cup orange juice

2 teaspoonfuls ground cinnamon

3.1/2 cups cake flour

1/2 cup semolina

1 level teaspoonful baking powder

1/2 teaspoonful baking soda

Syrup:

1 cup honey

1 cup sugar

1 cup water

About 1/2 cup coarsely ground almonds or walnuts

Mix the oil, sugar, orange juice, cinnamon and beat well, mix sifted flour, baking powder and soda, add gradually to liquid mixture, form into a light dough.

Form egg-sized oval portions flattened at the bottom and put onto a plain baking tin. Bake at 190° C for 20-25 minutes.

Syrup: bring ingredients to the boil and skim off foam. Boil for 2-3 minutes.

As soon as the melomakarona come out of the oven, pour almost cold syrup over them with a spoon and sprinkle with ground almonds.
