Halloumi the traditional Cyprus cheese

Halloumi Saganaki with shrimps[INLINE]
Ingredients :
- 1 halloumi
- 500 gr. boiled shrimps
- 400 gr. cherry tomatoes
- 1/2 cup of oil
- salt
- pepper
- parsley leaves
Method:
Cut the halloumi into slices
and put it in the oven.
As soon as it gets softer add the boiled shrimps,
the thinly sliced cherry tomatoes salt and pepper,
but don’s stir the mixture.
Leave it in the oven for 10 - 15 minutes
Garnish with parsley leaves and serve
Halloumi Kebab
[INLINE]Ingredients :
- 1 large halloumi
- tomatoes
- green peppers
- onions
- salt
- pepper
- oregano to taste.
Method:
Cut the halloumi into small cubes.
Chop the tomatoes, the green peppers
and the onions. Insert a kebab stick on
the halloumi cubes and place sliced peppers,
onions, and tomatoes in between.
Cook under a grill or on a charcoal
Serve with salad and toasted pitta bread
Chicken with Halloumi cheese

Ingredients :
- 4 slices Halloumi
- 4 chicken fillets
- 2 tomatoes
-1 onion
- oil
- salt
- oregano
- mix vegetables and rice
Method:
Heat the oil in a lrying pan and fry the chicken until lightly browned
and cooked through.
Lift the chicken out of the pan.
Add the chopped tomatoes and onion and fry for about 3 -4 minutes.
Return the fillets to the pan and add the salt, pepper and oregano.
When cooked, add a slice of halloumi on each fillet, cover with a foil
and bake in a moderate over until the halloumi is soft
Serve with sauted vegetables and rice.
